Five Ways to Save on Easy Budget Dinners

Here are some ways to feed your family a quality dinner and save a ton:
1. Homemade Pizza - Making Pizza from scratch is much easier than you think. Use a pizza-crust mix or make your own dough in a bowl in 10 minutes or less. After the dough rises, roll it out, add toppings and bake. It costs between $1 and $2 for a medium pizza, depending on the toppings. Add a tossed romaine salad. My family of four eats for about $1 each, about what it would cost just to tip the pizza delivery guy.
2. Homemade Soup - Soup is my favorite dish to make. In 10 minutes you can fill a pan with water, vegetables, legumes, seasonings, a can of tomatoes, and meat, then in a couple of hours, you have a great meal. These soups usually cost between $2- $4, and most of the time you can have it for more than one meal.
3. Egg Dishes - For a very fast dinner, make a frittata on the stove using leftover rice, pasta, potatoes or green vegetables. With a half-dozen eggs and a cup of cheese, you can whip together a main dish in about 15 minutes. Add a green vegetable, salad, or tortillas, and your family is eating for about $1 per person.
4. Vegetable Stir-Fry - The basic stir-fry recipe goes like this: Take whatever vegetables you have on hand, sauté it with a simple marinade, and serve over rice. Dinner is served! Even better, you need only one pan or wok, so cleanup is easy, too.
5. Pasta - Dry pasta, canned tomatoes, and pasta sauce should be among the pantry staples a Strategic Shopper always has on hand - since sales and coupons make it easy to stock up for very little or even nothing at all! Top the pasta with vegetables, leftover chicken or meat, and sprinkle cheese on top. $1 or less per person.
